A coworker of mine wanted a recipe for a cinnamon quick bread. So I told her I would find her one and make it for our Thanksgiving breakfast party. Our little parties really only last about 20 minutes but it’s fun to eat, laugh and share!
We really don't need a reason to celebrate, everyday is a celebration with these girls. We have so much fun together. I can say I love my job because of these girls and the others too! But we do take every opportunity we can get to throw a little party..
So I brought this cinnamon quick bread and a pitcher of Vietnamese Coffee.
It sure had cinnamon all right. I really liked this bread but maybe just a little to much cinnamon for me. Next time I will cut back and use 2 teaspoons! But that was just me. You decide!
Cinnamon Swirl Quick Bread

1 loaf
- 1/4 cup butter, softened
- 1 1/3 cups sugar divided
- 1 egg
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup buttermilk
- 1 tablespoon cinnamon
Preheat oven to 350°F.
- In a large mixing bowl, beat together butter, 1 cup sugar, and egg.
- Combine the flour, baking powder, baking soda, and salt.
- Add the flour mixture to the egg mixture alternately with the buttermilk.
- In a small bowl, combine the cinnamon and remaining 1/3 cup sugar.
- Pour a third of the batter into a greased 9X5-inch loaf pan.
- Sprinkle a third of the cinnamon sugar on top of batter.
- Repeat layers twice.
- Cut through batter with a butter knife making a swirl design.
- Bake for 45-50 minutes, until a toothpick inserted near the center comes out clean.
- Cool in pan for 10 minutes.
- Remove from pan to a wire rack to cool completely

Even though our Thanksgiving is very small in number, with hubby and son (we don't count the cat cause she doesn't like turkey). We don't scrimp on the menu...from appetizers to desserts with several carb loaded dishes in between! We will be enjoying tryptophan playoffs too!
