Broccoli Casserole Recipe

I have the perfect recipe that would be an excellent side dish  for Thanksgiving or Christmas! Six ingredients is all it takes!

Broccoli Casserole!

brocooli, bread, applesauce 207

I’ve been making this recipe for over  32 years and can honestly say, it's one of my very favorites. I was given this recipe from an old boyfriend’s sister. I don't remember names anymore, but I can remember this Broccoli Casserole Recipe by heart.

brocooli, bread, applesauce 188

Six easy ingredients is all it takes.

Just cook your broccoli and chop it up, then add the other 5 ingredients. Throw it in a pretty casserole dish and bake it till it’s brown and bubbly.

In the original directions, there was a cracker crumb sprinkled on top. I don't usually do that.

brocooli, bread, applesauce 189

I did it this time because I have been hooked on homemade bread crumbs and thought I would give them a try on this.

Ohhh!, after thought! What about trying French Fried Onions on top? This could/should/would replace that green bean casserole!

Makes for a pretty presentation but I’m back to the plain top. I don’t think it needs anything else, but you be the judge.

Now I’m not a gambling kind of girl, but I bet you could mix it up in the crockpot earlier in the day and cook it slow and low till it’s brown and bubbly. That way it would free up the oven for that turkey and those pies! :)

I made little individual ones here but I usually just make one big  casserole. I serve it family style, with love and thanksgiving! Hope you enjoy!

Broccoli Casserole

  • 1 onion, chopped
  • 1 Can Cream of Mushroom Soup
  • 1 cup mayonnaise

  • Salt and Pepper to taste
  1. Mix all ingredients in a bowl (or crockpot).
  2. Place into a lovely dish.
  3. Bake at 375, till brown and bubbly!
  4. Enjoy!

Baked French Toast with Pecan Praline Topping

This was the breakfast casserole that I made for New Years Day breakfast. It was so good that I'm thinking that it should make an appearance on the Valentines brunch menu. A sweet way to start the day, it was very easy and not time consuming at all. In fact, you start the night before.

Instead of lining up my bread slices all in a row, I broke the bread into little pieces. I thought it would soak up more of that spiced custard just a little bit better. Topped with a decadent pecan praline layer, this recipe definitely says, "Will you be mine?"

Baked French Toast with Pecan Praline Topping
Recipe by: Paula Dean
First seen on Sweet Cheeks in the Kitchen
Serves 6-8

1 loaf French Bread
8 large eggs
2 cups half-and-half
1 cup milk
2 tablespoons sugar
1 tablespoon vanilla extract
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
Dash salt
Praline Topping, recipe follows

Directions
Slice French bread into 20 slices, 1-inch thick each. Arrange slices in a generously buttered 9 by 13-inch flat baking dish in 2 rows, overlapping the slices.
In a large bowl, combine the eggs, half-and-half, milk, sugar, vanilla, cinnamon, nutmeg and salt and beat with a whisk until blended but not too bubbly. Pour mixture over the bread slices, making sure all are covered evenly with the milk-egg mixture. Spoon some of the mixture in between the slices. Cover with foil and refrigerate overnight.

The next day, preheat oven to 350 degrees F. Spread Praline Topping evenly over the bread and bake for 45 minutes, until puffed and lightly golden.
Praline Topping:
1/2 pound (2 sticks) butter
1 cup packed light brown sugar
1 cup chopped pecans
2 tablespoons light corn syrup
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
Combine all ingredients in a medium bowl and blend well.
Spread over bread as directed above.

Beachside and a Crockpot Breakfast

We made it to the Beachside camp ground on the Oregon Coast. The weather is warm and sunny but that damn wind makes it quite cold. The beach is long and clean and surprisingly quite. For a 4th of July weekend, there has been many vacancy's all during our stay.

This is the view from our spot. We're practically on the beach. A little bit scenic with much needed protection from the wind.

Have you ever seen a monkey tree? I've only seen them in Oregon. My first monkey tree was about 10 years ago at Shore Acres botanical gardens, 10 miles outside Charleston, Oregon near Sunset Bay. They are unique!

Here's my monkey in a tree !

This is my tiny kitchen. It makes me appreciate my 64 square foot kitchen at home. Definitely not alot of counter space.

But it hasn't stopped us from some pretty tasty meals. Like BBQ ribs and my favorite, Black and Blue Ribeyes.

This is the before picture of a great crockpot breakfast. I saw this on Michele's blog, A Big Cup Of Tea. I layered frozen potatoes, bacon, cheese, with egg substitute poured over the top. Left to cook 10 hours or over night and wake up to a hot and delicious breakfast. This recipe is a keeper where ever you cook it. One to try for sure!

The finished product and a hot breakfast.

Tomorrow were headed up close to Astoria. It's the biggest state park in Oregon. I'll be taking pictures so stay tuned. Until next time, try the crock pot breakfast!

Total cost so far:

Gas $122.00 (Gotta fill up tomorrow)

Park-$85.50 (4 nights so far!)

Golf-$80.00 (That would be for one person-I don't golf.)

Cancer and Comfort

My poor little pup had to have surgery!
Here he is the day he got home, in his pajamas. You know he feels bad if he's wearing anything. He is not a fashion dog!
Earlier in the week. he wasn't feeling well so I took him to the vet. He had to get 2 booster shots, and his nails dremeled anyway. So he was a sick pup and was given a third shot and antibiotics. I showed the doc how this mole was growing, and he said we better take it off. So surgery was 2 days later.

Double whammy for the dog!

So one pathologist bill, and two vet bills later, the doc calls to tell me his mole was a cancerous tumor. He had Canine hemangiosarcoma (HSA). Its an aggressive cancer of blood vessel-lining (endothelial) cells.
He's better now. The P.J's are long gone and the wag is back in his tail. But there is nothing sadder then a sick pup! So we needed some comfort food around here.
This is a cross between mac and cheese and spaghetti. I got the recipe from a friend a few years back and I just call it turkey and pasta. Originally the recipe called for hamburger, but I use ground turkey now days. It also calls for a can of Cheddar cheese soup, but if your an anti-canned soup kind of girl, you can just make a cheese sauce. But then you'll want to pull out a bag of your frozen home made pasta sauce too, cause this baby has a jar of spaghetti sauce in it.
Easy recipe, pantry friendly ingredient list,
and a favorite among the kids.

This is my entry to Monthly Mingle-Comfort foods, hosted by Meeta at What's for lunch, honey?

Turkey and Pasta

1 lb pasta (I use Penne)
1 lb ground meat (hamburger, turkey, chicken)
1 jar spaghetti sauce
1 can Cheddar cheese soup
2 cups cheese.

Cook pasta according to directions. Drain.
Brown ground meat, remove fat.
Add cooked pasta, spaghetti sauce, soup and one cup cheese. Pour into greased casserole dish and top with remaining cheese. Bake 375 untill brown and bubbly.

My daughter likes it just like this but,
You could brown onions with your meat,
You can add any spice, (a little chili powder maybe?)
More cheese to make that cheesy crust on top!
Switch out your favorite cheese
Throw in a veggie, (broccoli would be good, or mushrooms!)

Serve and be comforted!
