Until now!
I waited till the last minute to fulfill my challenge. That gave me ample time to read every one's trial and tribulations on the DB blog. So I expected some weeping of the meringue and puddles of congealed lemon curd. What I got was an amazing pie. I made four mini pies because I thought I could give one or two away. (which I didn't) Besides the fact, that they are just so darn cute!
The lemon curd set up nice without even a hint of ooze.
The meringue, Oh the lovely meringue. It was a billowing melt in your mouth fluffy puff. Yes, I loved the meringue!
The pie crust. Well, as careful as I was not to overwork it, it came out a little tough. But not so tough that it stopped anybody from eating it.The crust, The pie, I'd like to try again.

I felt the same way, but the pie didn't quite win me over. LMP is just not for me. But I'm glad you have found something you really like. YAAAY for the Daring Bakers.

ReplyDeleteWow, your pies look perfect. Especially good job on the meringue piping. Your crust was tough and you think you overworked it. Mine oozed butter and shrank and I think I may have underprocessed it. There's probably a perfect middle ground somewhere.

ReplyDeleteI think it is quite funny how some people that REEEEALLY wanted to do this challenge had some problems and others that were not so excited didn't have any problems at all, beautiful pies!!!
I made coconut cream pie once, but the filling didn't thicken enough. Maybe I'll try lemon meringue next. Yours look good!

ReplyDeleteOne hundred or so LMP's into my Daring Baker marathon (in some ways, three days home with a sinus infection is a blessing... if I can't cook, I can dream about food) and we have a conversion. Glad this recipe worked so well for you. It's neat to discover new food loves.

ReplyDeleteI'm glad that you changed your mind about lemon meringue pie. I was lucky that the first time I ate a LMP, it was a homemade one a friend made, so it was delicious. I've had others at restaurants, and it was rather disappointing. So I never order them any more and make them myself if I have the craving for this pie.

ReplyDeleteThanks everyone for stopping buy and the nice comments! The little pie plates I used were my mom's. She must of bought those some 30-40 years ago. They are made by Pyrex but a quick scan of the internet came up empty.
ReplyDeleteAs soon as I find a good gluten free pie crust recipe, I am making a lemon meringue pie. I used to ask my Mom to make me a lemon pie for my birthday instead of a birthday cake. MMMMMMM.
